  1. Mix the cut mango pieces with salt and chilli powder.And keep aside for 5 to 6 hrs.
  2. In a deep bottomed pan add oil,then fenugreek,when it starts to splutter add mustards.add ginger garlic,green chillies saute well.add then the curry leaves and saute untill it's water dries out completely.
  3. Then add vinegar mixture.when it boils add the mango pieces and asafoetida.and mix well.let it boil for a few minutes.till the gravy starts to thicken. Put off the flame and remove from the stove top
  4. Check the salt.let it remain in the pan for 1 day and then remove it to a glass bottle.and enjoy with your meals.
