Heat some oil, add the mustard seeds, once it starts sputtering, add the asafoetida and lastly add the sesame seeds, mix and remove. Watermelon rind, is the hero ingredient here. Raw Rice, i have used sona masuri variety of rice for this recipe. You can also try using half idly rice and half raw rice for this.
Instructions to make Watermelon Dhokla:
- Take a bowl & add rava, besan & watermelon juice to it. Mix well to form a lump less batter.
- Add lemon juice & salt to taste.
- Lastly add eno fruit salt to the batter & guve a gentle stir to it.
- Grease a pan with oil & pour the batter into it. & place the pan in a steamer to cook for atleast 15 minutes.
- After 15 minutes check with a fork to see if it is done.
- In next step prepare tadka by heating up a pan. Add oil, mustard seeds, sesame seeds, slit greean chillies, sugar.
- Add some water to it. & pour this over prepared dhokla. Garnish with chppoed coriander leaves. ๐

Heat sesame oil in a pan, add mustard seeds, curry leaves, sesame seeds and let it splutter. Add red chilli powder, lemon juice, coriander leaves and dhokla toss it well. In a bowl, add the crumbed sides of dhokla , sesame seeds, thadka, lemon juice, coriander leaves, mix everything well.
