  6. Make ready 1/3 cup desiccated coconut

Dice two-third of the mango and slice the remaining. Stir in the diced mango and peach into the muesli mixture. Top with sliced mango and a dollop of remaining. Fold through the muesli, most of the tropical mix and a pinch of salt.

  1. Preheat oven to 160 degrees Celsius.
  2. Grease and line a rectangular baking tray 20cm x 30cm with baking paper and set aside.
  3. Stir chopped butter, sugar and honey in a large saucepan over low heat until sugar dissolves. Do not stop stiring until dissolved.
  4. Remove from heat and add the remaining ingredients.
  5. Press mixture into prepared pan.
  6. Bake for 40 minutes or until lightly golden
  7. Cool completely in pan before removing. Slice and enjoy. Store in an airtight container in the cupboard.
