The ingredients needed to make Bacon and cheese meatballs:
  1. Take 500 grams mince
  2. Prepare 1 slice bread (or more to make more / bigger meatballs)
  3. Take 1 milk (to cover bread with)
  4. Prepare 1 tsp salt
  5. Get 1 tsp parsley
  6. Take 1 cup cheese (any kind you like)
  7. Take 250 grams streaky bacon
  8. Prepare 8 toothpicks
  9. Make ready 1 oil (for frying)

Heat the oil in a skillet. Cut the bacon strips in half. Sear all sides until outside is crispy and brown all over. Be careful when rolling, if it sticks to.

Steps to make Bacon and cheese meatballs:
  1. Preheat the oven to 180C.
  2. Break the bread in big-ish pieces into a bowl. Cover with enough milk so the bread soaks up all the milk.
  3. Place the mince in a seperate bowl and add the salt, parsley and cheese. Mix well.
  4. Mash the bread with a fork to incorporate all the milk.
  5. Add the bread mixture to the mince mixture and mix well.
  6. Roll the mixture into balls and cover with bacon, secure with a toothpick.
  7. Pour oil into an oven save dish and place the meatballs evenly in the dish. Bake in the oven for 20 - 30 minutes or until the bacon is crispy. (You can fry them on the stove top as well but I find that they break easily.)

I can't even contain my LOVE for there. In a large bowl, mix together the ground beef, bacon, egg, cheese, garlic, basil, parsley, salt, pepper and breadcrumbs. Since the ground pork sausage already had seasoning, I kept any added seasoning to a minimum. The bacon and Parmesan cheese will make it too salty. These cheese and bacon balls aren't just fantastic, they're ketotastic!
