  1. Get 2 packages active dry yeast
  2. Get 1 tbsp sugar
  3. Get 1 cup milk
  4. Get 1 cup water

  7. Take 1 tbsp salt
  8. Take 1 cup sesame

Also known as Turkish bagel, Gevrek or Koulouri, this crusty bread is probably the most common bread in Turkey. Dip each ring into the egg yolk-water mixture, then transfer to a wide, rimmed dish of sesame seeds. Transfer to a parchment lined-baking sheet and let rise for approx.   1. Mix the milk and the water, and warm it a bit.
  2. Add the yeast slowly while stirring the mixture.
  3. Add the eggs to the mixture and mix it very well. Wait for five minutes after you are done.
  4. Add the salt and dissolve the salt in the mixture.
  5. Add the flour while stirring. You may need to add more flour and stir longer until the dough gets bouncy and stops sticking to your hand.
  6. Put the dough in a container and cover the top (you can use a pot), and wait for 30 mins.
  7. While waiting for the dough, fry the sesame in a pan in a mid-heat. No need to use oil in this step.
  8. When dough is ready, cut pieces in the size of orange. Shape them like a cylinder and merge the ends to make a tire-like shape. It should be skinnier than bagel, please see the photo at the top for an example.
  9. Mix molasses with 3/4 glass of water.
  10. Using a brush, cover each pieces of dough with molasses sauce.
  11. Put the sauced dough into sesame pan and flip the dough to make sure it is covered by sesame completely.
  12. Preheat the oven to 400 for 12 mins.
  13. Place the doughs to the oven tray as shown in the picture. Use aluminum foil.
  14. Cook it for 20 mins in 400°F. Enjoy your simit.

A great midday snack, or include as part of a packed lunch with cheese, olives and cold meats. Place the simit rings on a baking tray lined with parchment.
