These round sweet balls are made by roasting the gram flour and ghee together, and then adding sugar to make a thick pasty dough that is then formed into delicious, melt-in-your-mouth balls. Besan ladoo are delicious sweet balls made with gram flour, sugar, ghee & cardamoms.

The ingredients needed to make Besan ladoo:
  1. Take 1/2 cup ghee / clarified butter
  2. Make ready 2 cups besan / gram flour, coarse
  3. Prepare 1 cup sugar
  4. Take 4 pods cardamom / elachi
  5. Get 2 tbsp melon seeds
  6. Take 2 tbsp cashew / kaju, chopped

Besan Ladoo, if stored well has a long shelf life so you can relish them for many days. You can make these ladoos on. Besan Ladoo is a round dessert ball made with gram flour which is called besan in Hindi and hence the name. Flour is roasted with ghee (clarified butter) and then sugar is added and then it's shaped into round balls.

Steps to make Besan ladoo:
  1. Firstly, in a large kadai heat ½ cup ghee and add 2 cups besan. Roast on low flame until the besan is well combined with ghee. Make sure to use coarse besan for grainy texture. Continue to roast on low flame. if the mixture turns dry, add a tbsp of more ghee. After 20 minutes, the besan starts to release ghee.
  2. Continue to roast until the besan turns golden brown and grainy. it may take approximately 30 minutes. Transfer the mixture to a large bowl, allowing to cool slightly. - meanwhile, dry roast 2 tbsp melon seeds and 2 tbsp cashew. Roast on low flame until the nuts turn crunchy.
  3. Then add the roasted nuts to roasted besan ghee mixture. Take 1 cup sugar and 4 pods cardamom in a blender. you can alternatively use tagar or boora. Blend to a fine powder without adding any water. Once the besan is cooled (slightly warm) add in powdered sugar.
  4. Mix well making sure everything is well combined. Do not add sugar if the mixture is hot, as it will melt the sugar and makes mixture watery. Prepare a ball sized ladoo adjusting sugar as required. Finally, enjoy besan ladoo for 2 weeks in an airtight container.

Nuts and raisins can be added. Some people also add sooji (rava/semolina) to the besan for the crunch. Instead of besan flour I used a gluten-free blend of millet and sorghum flour and a bit of of standard white flour.
